The Bikini Cocktail

Yields 10 people

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Combine every components inside a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, take off the burner and leave to cool down entirely. Pour to a sealable bottle, seal and refrigerate it chilled, it can be stored for up to a month.

To make Cocktail Base: Pour the specified liquid ingredients in a big jug, let it rest for one hour, then filter it best through a fine cloth, to ensure it's completely strained.

To serve: Pour 85ml of your premix into your mixing glass filled with ice, and stir gently for one minute to chill. Pour into a chilled martini glass or a similar vessel, garnish with the cranberries and complete it with a light spray of mandarin oil over the drink.
